Tonight is "Burns Night."

每年一月二十五日,英國不少地方以及一些駐外使館都會舉辦 Burns Night(彭斯之夜),紀念蘇格蘭民族詩人彭斯誕辰,蘇格蘭尤其熱鬧。

Robbert Burns 是詩人、作曲家及蘇格蘭平民百姓不朽的代表。每年的1月25日,四處的英國人都會以食物、舞步、歌曲及詩作,慶祝這位蘇格蘭偉大吟遊詩人的作品、精神及一生。 



Burns在1759年出生於Alloway (Ayr南1.5英里),1796年去世後,他的出生地 Alloway 樹木茂盛的村莊已成為許多遊客每年遊的勝地。Burns 的作品屢屢提及他生長的地方,他的詩和歌曲深深吸引著遊客前往 Ayrshire (約爾夏) 鄉郊,現稱為「彭斯鄉郊」(Burns Country)



彭斯之夜 (Burns Night)的主要活動就是「彭斯晚宴」(Burns Supper)。彭斯晚宴是蘇格蘭的傳統,現時已成為全英國的習俗。慶祝的形式可以是輕鬆的朋友聚會,或是配以美食、風笛手及備受讚賞的演出者之大型禮節晚餐。 



正式的彭斯晚宴,有風笛吹奏迎接嘉賓。主席致歡迎詞之後,誦讀簡短禱文,然後廚師用銀盤捧著蘇格蘭傳統食品 haggis,在風笛聲中進場,身後跟著一名風笛手,一個誦詩人。這時大家要站起來按風笛節拍鼓掌,直至廚師走到主桌前放下銀盤。這時大家可以坐下來,聽誦詩人向著 haggis 朗誦彭斯的詩篇「To a Haggis」。 



吃飽後可欣賞歌曲、音樂及誦讀彭斯一生故事的詩篇,還有經典作品《My Luve is Like a Red Red Rose》及《Tam O’Shanter》。經常都會向女士(lassies)祝酒,及興奮地演奏彭斯其中一首最著名的歌曲《Auld Lang Syne》。 



Haggis依成寒姊的說法為「哈吉斯,俗稱肚包羊雜」,以剁碎的羊內臟混和燕麥、香料,用羊肚包煮成。誦詩後,大家就開始用餐。 



傳統的 haggis 有很多種,但令我沒想到的是竟然也有素食的 haggis,而且種類還不少。詳情請見:

為什麼是 haggis (哈吉斯) 呢?根據我查到的資料顯示是這樣說的:

「Although not an exclusively Scottish concept, the haggis has become strongly identified with Scotland because of Robert Burns' now world famous poem To A Haggis.

Burns wrote this hearty, mock-heroic poem in 1786 on his first visit to Edinburgh. Written in broad Scots and well-suited to being declaimed in a loud, patriotic voice, the poem would have contrasted with the more genteel poetry in vogue in the capital at the time.

Though To A Haggis is not one of Burns' finest poems, its enduring popularity and the key role it plays in the global Burns Supper phenomenon have helped ensure the status of the haggis as a Scottish icon.」



除了 haggis 之外,其他彭斯之夜的蘇格蘭傳統食物還有 cock-a-leekie soup 及一種叫 Crannachan (Traditional Oatmeal) 的蘇格蘭傳統甜點。 

  

Cock-a-Leekie Soup (Serves 4-6 people)
1 boiling fowl 2-3 lb
1 onion, quartered
1-2 lb (400-800g) leeks, cut into inch long (2-3cm) pieces, white and green kept separate stock from boiling fowl
1 bay leaf, some parsley
6-12 prunes soaked overnight (optional)
salt and pepper 

  

Crannachan (Serves 4-6 People)
3-4 oz (75-100g) toasted, sifted pinhead oatmeal
1/2 pint (250ml) double cream
1 tablespoon whisky
4-6 oz (120-140g) soft fruit (raspberries, brambles, or blueberries. In winter, you can buy these frozen.)



Traditional Burns Supper Format:

1.Opening Address:通常從朗誦 Selkirk Grace 開始

Selkirk Grace

Some hae meat and canna eat
And some wad eat that want it:
But we hae meat and we can eat,
And sae the Lord be thankit.

2.Address to the Haggis:致哈吉斯 

3.The Immortal Memory:朗誦彭斯的詩來紀念他。 
The speaker ends on an up-beat note with a toast:“To the immortal memory of Robert Burns! ” 

4.Toast to the Lassies:向女士祝酒,會齊喊“To the Lassies!”
 
5.Response to the Toast to the Lassies:女士則會用幽默、灰諧的方式,引用有關 Burns' life and works的詩句來做回應。 

6.Songs and Poems:整晚的活動都在朗誦彭斯的詩篇,最後高潮大家會一起唱 Auld Lang Syne (驪歌)。
